White Chocolate-Macadamia Nut Cupcakes

I was going through a macadamia nut phase {was?…yeah…I’ll go with that} so I wanted to find a way to incorporate them into a cupcake recipe. Whenever I think of macadamia nuts in a dessert, I think of white chocolate-macadamia nut cookies. Perfect! Let’s just make that flavor combo into a cupcake. Then slap on some cream cheese frosting and they’ll be tasty enough to make you want to slap your momma…or whoever is sitting next to you.

For purposes to make this recipe easy-peasy, I wrote it using a white cake mix. You can certainly take the time to make your batter from scratch.

Ingredients:
1 Box white cake mix {I like the kind with pudding in the mix}
Eggs, oil and water according to package directions
1 cup white chocolate chips
1/2 cup macadamia nuts, chopped
Cream cheese frosting – recipe follows

Directions:
Preheat the oven to 350 degrees and line 2 muffin tins with cupcake liners (makes 2 dozen.)
Mix the white cake mix according to package directions. Add white chocolate chips and mix well. Pour evenly among the cupcake liners. Bake according to package directions and set aside to cool. Make the cream cheese frosting. Frost the cupcakes with the frosting and sprinkle with macadamia nut pieces.
I tossed the nuts in a little hot pink food coloring to make them a little more festive. You may skip this step.

Cream Cheese Frosting:
1 {8oz} package cream cheese, at room temp
1 stick un-salted butter, at room temp – must use real butter
About 2 cups powdered sugar, depending on the consistency and sweetness level you prefer
1 Tablespoon vanilla
1 teaspoon almond extract {optional}

Mix all ingredients with mixer until smooth. You may add a bit of milk or water for consistency purposes if you like.
