Bacon-Wrapped, Almond-Stuffed Dates

I haven’t had a juicy date in a while. Yes, usually I would delight in a sentence with such an obvious double entendre, but in this case it is just depressing. Either way, these dates are sure to pick up anyone’s spirit. Even if you sometimes feel like the president of the lonely hearts club.

*You may want to let your guests know they are stuffed with almonds. I served these at a cocktail party once and noticed a friend with little pile of almonds on her hors d’oeuvres plate. Soon after I witnessed another friend lean over and tell her they were almonds, not pits. We all got tickled about it.

Ingredients:
12 fresh medjool dates
6 slices bacon, cut into thirds
12 whole almonds

Directions:
Preheat oven to 350 degrees. Cut a small slit into the length of each date to remove the pits. Replace pits with an almond and smoosh {yes, smoosh} the dates back together. Wrap a slice of bacon around each date and secure with toothpicks. Place dates on a baking sheet and cook for 15-20 minutes until the bacon is crisped, turning once while cooking. Remove toothpicks and serve. These are great because they are good warm, at room temp, and cold. They keep well.
