Bacon-Wrapped Asparagus & Red Pepper Bundles

It’s a sight to be seen. This is less of a recipe, more of an urgent message…You must make these ASAP! How can you go wrong? Adding bacon to a bundle of yummy asparagus and tossing in a few slices of red pepper. Mmmmmmm…to say the least.

1 bunch fresh asparagus, rough ends cut or snapped off
4 slices bacon
1/4 of a red pepper, cut into strips {you need a total of 16}
About a Tablespoon of olive oil
Salt and pepper to taste

Preheat oven to 350 degrees. Divide asparagus bundle into fourths. Take one fourth of the asparagus and wrap it in a piece of bacon. Insert four red peppers into the bunde and place on a baking sheet. Repeat for all bundles. Drizzle with oilve oil and season with salt and pepper. Cook until asparagus is tender and bacon is cooked {20-30 minutes.}

*Cooks tip: to ensure crispier bacon without burning the asparagus, par cook it for about 5 minutes before wrapping asparagus.
