Simple Pasta Parmesan

Most of the recipes I post on Pinterest will never come to fruition, but for some reason this recipe kept calling my name. It may have been because it just seemed so simple. Or perhaps because it is a skinnier version of a heavy, cream-based sauce full of a cheesy flavor this recipe emulates by simply tossing the pasta in grated parmesan. This recipe was inspired by a recipe I spotted on Pinterest, but has been jazzed up to offer a full “P&P” experience. You’ll love or this recipe! It is so vibrant and easy while still maintaining the cheese factor we all know and love.

About 5 ounces pasta {I used capellini}
2 Tablespoons extra-virgin olive oil
2 Tablespoons grated parmesan cheese
3 large basil leaves, chiffonade or chopped
Juice of 1 lemon
1/4 teaspoon garlic powder
Salt, pepper and cayenne pepper to taste {just a sprinkle of each}
Plus salt for pasta water
Garnish with tomatoes {If desired}

Bring pot of salt water to boil. When boiling, add pasta and cook to al dente. Strain and place in a large bowl. Add the remaining ingredients and toss to distribute evenly throughout the pasta.

I think next time I will add lemon zest to the pasta as well for an even stronger lemon flavor.
