This recipe was stolen borrowed from one of my aunts recipe box. It’s the best peanut brittle and it’s perfect for the holidays. Give as gifts or just leave around the house to snack on. After all, you don’t have to count calories during the holidays. It gets us in the Christmas spirit!!!

1/2 cup water
2 cups sugar
2 Tablespoons butter
2 teaspoons baking soda
2 cups raw peanuts
1 cup karo syrup
1 teaspoon vanilla extract

Bring water to a boil and add sugar and syrup. Stir until dissolved and boil until it will spin sugar {300 degrees.} Add peanuts and cook until golden brown. Remove from heat and add butter, soda and vanilla. Stir quickly and spread onto two large, well-buttered cookie sheets {I use parchement paper to ensure it doesn’t stick to the pan.} Break into pieces.
