One time, while preparing these mashed potatoes for a dinner party, a friend was sitting at the counter watching and keeping me company. After observing me put the cream cheese in the mixer with the rest of the ingredients, she very wide eyed-ily looked at me and asked “Did you just put an entire package of cream cheese in those potatoes?…I think I may need to go workout for a while, then come back for dinner.”
It’s true…Healthy, these potatoes are not. But believe me, they truly are the best mashed potatoes you’ll ever eat!
4 large baking potatoes, peeled and cut into chunks
1 (8oz) package of cream cheese
1 stick of butter
About 2 Tbsp milk
Salt and *Pepper to taste
*My Great Grandmother would throw a fit if you used black pepper. She insisted that mashed potatoes must have white pepper so you would not be able to see the little blacks flecks in them. I say whatever floats your boat!..Sorry Granny.
Boil the potatoes until they fall off a fork when inserted. Drain and place in a stand mixer fitted with the paddle attachment (can be mashed by hand.) Add the remaining ingredients and mix on low until just mixed. Be careful not to over mix mashed potatoes, they can get starchy and it ruins the texture.
Don’t tell your guests what are in the potatoes. First of all, they feel guilty eating them knowing how unhealthy they are, and second, they never know where the rich taste comes from (It’s the cream cheese.)
