Marshmallow Frosting

No description necessary, really. If you’re making something with marshmallows, figure out a way to use this instead {wink.} It’s great for cake frosting, pie topping or making s’mores concoctions. I think it might even be splendid for topping sweet potato casseroles…Mmmmm…the possibilites!

4 large egg whites
1 cup sugar
1 pinch of salt
1 tsp vanilla essence

Place all ingredients except the vanilla into a bowl which you can place over a pot of simmering water. Whisk the eggs and sugar constantly over simmering water until the sugar dissolves and the mixture is hot to the touch {about 5 minutes.} Pour the mixture into a stand mixer fit with the whisk attachment, add the vanilla and mix on medium speed for about 3-5 mintues until fluffy and silky.
