Candied Jalapeño Pecans

These may not be much to look at, but they sure are addictive as a snack. A little sweet and a nice jalapeño flavor without the heat. Make for a snack or use chopped up in or to top other dishes.

2 cups pecans
1 egg white, whisked until little bubbles form
3 Tablespoons jalapeño juice {the juice in a jar of pickled jalapeños}
4 packets Splenda {or other sweetener}

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Toss all ingredients together to coat the pecans. Spread on the baking sheet in a single layer.
Bake for 20 minutes.

*Cooks note: the pecans will be a little tender when they first come out of the oven. Allow them to cool and harden up before eating.
