Cauliflower "Mac"-n-Cheese

This past weekend I had the pleasure of attending an event in my hometown of Nacogdoches called the Wine Swirl. It was a weekend of amazing food and wine! One of the dishes served at the four-course wine dinner at the Hotel Fredonia was their famous cauliflower macaroni & cheese. It added a unique new flavor to this, often times, redundant side dish.

Alas, my weekend of debauchery is now over and I am back to low-carbing it, I decided to make a version of the Mac-n-Cheese, and simply leave out the mac altogether. I also thought adding finely chopped pecans to the top would give the dish that crunch and texture you would get by adding breadcrumbs to the top of the typical mac during baking. It was a very nice way to enjoy cauliflower and I will definitely make it again, possibly using other veggies in the casserole.

1 large head of cauliflower, leaves and stems removed, coarsely chopped
2 cups chicken stock
1 cup white cheddar cheese, shredded
1/2 cup gruyere cheese, shredded
1/2 cup heavy cream
2 ounces cream cheese
1 Tablespoon butter
Salt & pepper to taste
1/2 cup pecans, finely chopped
Non-stick cooking spray {or a little oil}

Preheat the oven to 350 degrees. Grease an 8×8 casserole dish.
Bring chicken stock to a simmer and add the chopped cauliflower florets. Cover the pot with it’s lid and cook until tender {about 3 minutes.} Strain and place cauliflower in a large mixing bowl.
Add cheese to cauliflower and toss together.
In the same pot the cauliflower was cooked in, add the cream, butter and cream cheese and cook until simmering, the cream cheese has melted and the cream has thickend slightly {about 5 minutes.}
Meanwhile, place the cauliflower mixture in the casserole dish. When the cream mixture is ready, pour evenly over cauliflower and sprinkle the pecans on top.
Bake for 30 minutes until golden bubbly.
