Love Letter Cookies with "Wax Seals"

I love this idea! Melted vanilla candy into letter “wax seals.” So cute! However, if you’re not feeling particularly patient, don’t bother. It will take a LOT of patience and many mistakes to get the hang of these “seals.”

For the Cookies
3 sticks unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
3 & 1/2 cups all-purpose flour
1/4 teaspoon salt
6 ounces chocolate chips
6 ounces white vanilla bark

Preheat the oven to 350 degrees.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla and almond extract. Add the flour and salt and mix on low until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk.
Roll the dough 1/2-inch thick and cut into rectangles, gathering and re-rolling out dough when necessary.
Place the cookies on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, until the edges begin to brown. Allow to cool to room temperature.
Put the chocolate in a glass bowl or mug and microwave on high power for 1 minute. Stir and continue to heat and stir in 30-second increments until the chocolate is just melted. Repeat for the white vanilla bark.
Spread the chocolate and melted vanilla on the cookies.
Place the leftover chocolate and vanilla bark into a plastic baggy with the corner cut off to pipe the envelope lines onto the cookies. Add a dollop of chocolate onto each cookie and place a candy “wax seal.”

For the “Wax Seals”
Colored vanilla candy for melting {found in the baking section of your crafte store}
Seal Stamp {used for sealing wax on letters}
non-stick cooking spray
parchment or wax paper

Use a glass bowl or a mug to melt your colored melting candy. Melt and allow to sit a while to cool down, but still be able to stir and pour. {You will have to re-heat the candy every 2-3 seals you make.}
Spray non-stick cooking spray onto the wax seal {you will have to do this every time you make a seal.}
Place a small dab of the candy onto the parchment paper, set the seal on top and allow to cool {about 1-3 minutes depending on how hot/cool your meted candy is.} Carefully remove the seal and set the “seal” aside. Repeat. If one messes up, simply toss it back into the mug to use again.
