Bacon-Wrapped Jalapeño & Pineapple Shrimp

Jalapeño and Pineapple Shrimp

Jumbo shrimp has always been my favorite oxymoron. Here is a quick and easy recipe so I can “use it in a sentence” {wink.}

Ingredients:
1 pound large sized shrimp
Bacon {not quite a whole package}, each piece cut in half lentghwise
1 small can pineapple chunks {fresh pineapple could certainly be used as well}
Pickled jalapeño slices {1 per shrimp}
Salt & peppers to taste
Toothpicks

Directions:
Peal and devein shrimp. Season with salt & pepper.
Place one shrimp on top of each slice of bacon
& top with *pineapple and jalapeño.

Jalapeño and Pineapple Shrimp

Wrap the bacon around securing with a toothpick.
Repeat for all shrimp.

Grill & enjoy!

*Cooks note: slice each chunk of pineapple in half
so they are thin and flat against the shrimp.
